Serves around 6 portions so can easily freeze and eat later.

Ingredients
- 4 large leeks, chopped
- 1 medium onion, finely sliced
- 56g butter
- 1 1/2 pints of vegetable stock
- 275ml milk (if vegan can substitute)
- Salt and pepper

Instructions
- Prepare all ingredients listed above.
- Gently melt the butter in a large saucepan and add the leeks, onions and potatoes, stirring well.
- Season with salt and pepper.
- Cover the vegetables on a low heat for 15 minutes.
- Add the 1 1/2 pint of stock and 275ml milk. Bring to a simmering point and leave to simmer for 20 minutes.
- After 20 minutes, leave to cool for a moment and then blend.
- Return the soup to sauce pan and reheat gently.
- Serve with some bread.
