Chicken Basque

This dish provides around 6 portions, so can easily be frozen and eaten later.

Ingredients

  • 2 chicken breasts, sliced
  • 225ml basmati rice
  • 275ml chicken stock
  • 170ml dry white wine
  • 1 tsp chopped fresh thyme
  • 1 red pepper, cut into strips
  • 1 medium onion, finely chopped
  • ½ chorizo sausage, fine chopped
  • 7 cherry tomatoes, chopped in half
  • 2 cloves of garlic, finely chopped
  • 1 tbsp tomato puree
  • ½ tsp paprika
  • Salt and pepper

Instructions

  1. Prepare all the ingredients.
  2. Season chicken with salt and pepper.
  3. Heat a large saucepan with olive oil and cook the chicken breasts until they are a nutty colour. Remove them to a plate lined with kitchen paper
  4. Add the onions and peppers to the heated saucepan and cook for 5 minutes.
  5. Add chorizo, tomatoes and garlic and cook for 5 more minutes.
  6. Stir in the rice, then add 1 tbsp tomato paste, ½ tsp paprika and 1 tsp thyme.
  7. Pour in 275ml stock and 170ml white wine, then add some seasoning.
  8. Mix all the food together then place the chicken on top. Make sure that the rice is at the bottom of the pan to cook.
  9. Once the food is gently simmering, place the lid on top and cook on a low heat for 10-15 minutes and stir occasionally. Leave to simmer until rice is cooked. If the rice starts to stick to the pan but is not cooked yet, add more water.
  10. Serve the food.
