Serves 6 portions, so can easily freeze and eat later.

:Ingredients
- 2 red onions, finely sliced
- 4 garlic cloves, finely sliced
- 2 tbsp curry powder
- 1 kg sweet potatoes, peeled and chopped
- 300ml of vegetable stock
- 400g tinned chopped tomatoes
- 125g baby spinach
- 3 tbsp double cream (if vegan can substitute with a vegan cream)
- 2 green chillies
Serve
- Rice
- Naan bread
Instructions
- Prepare all ingredients listed above.
- Heat a large saucepan with olive oil, then fry onion until soft.
- Stir in garlic, ginger and curry powder and cook for 2 more minutes.
- Add sweet potato, chopped tomatoes and 300ml of stock and bring to simmer. Cook until the sweet potatoes are soft (around 20 minutes).
- Stir through the baby spinach and cook for 5 minutes more, then stir in cream and leave to bubble uncovered for 5 minutes. Season to taste.
- Serve with rice or naan bread.
