Serves around 6 portions so can easily freeze and eat later.

Ingredients
- 1 onion, finely sliced
- 1lb carrots, chopped
- 1 tsp coriander
- 1/4 tsp curry powder
- 1/4 tsp ground ginger
- 1 tsp sugar
- Salt and pepper
- 1 1/2 pints of vegetable stock
Instructions
- Prepare all ingredients listed above.
- Heat a large saucepan with olive oil and fry onions for 1 minute.
- Add all the other ingredients.
- Bring to boil and then leave to simmer for 20 minutes stirring occasionally, or until the carrots are tender.
- Blend all the ingredients.
- Serve. You can also serve with bread.
