Carrot and Coriander Soup Recipe

Serves around 6 portions so can easily freeze and eat later.

Ingredients

  • 1 onion, finely sliced
  • 1lb carrots, chopped
  • 1 tsp coriander
  • 1/4 tsp curry powder
  • 1/4 tsp ground ginger
  • 1 tsp sugar
  • Salt and pepper
  • 1 1/2 pints of vegetable stock

Instructions

  1. Prepare all ingredients listed above.
  2. Heat a large saucepan with olive oil and fry onions for 1 minute.
  3. Add all the other ingredients.
  4. Bring to boil and then leave to simmer for 20 minutes stirring occasionally, or until the carrots are tender.
  5. Blend all the ingredients.
  6. Serve. You can also serve with bread.
