Chicken Fajita Recipe

Serves 9 people, so if you have any leftover you can just freeze it and have it another day.

CHICKEN FAJITAS: The perfect meal to share

Ingredients

  • 4 chicken breasts, finely sliced
  • 2 red onions, finely sliced
  • 2 red peppers, cut into strips
  • 2 red chillies, finely sliced
  • 2 heaped tsp smoked paprika
  • 2 tsp ground coriander
  • Pinch of ground cumin
  • 4 garlic cloves, crushed
  • 8 tbsp olive oil
  • 1 lime, juiced

To serve

Instructions

  1. Prepare all the above ingredients
  2. Mix 2 tsp smoked paprika, 2 tsp ground coriander, a pinch of ground cumin, 4 crushed garlic cloves, 8 tbsp olive oil, the juice of the lime in a bowl, and add some salt and pepper.
  3. Add the chicken breast, red onions, red peppers and red chillies to the bowl of spices and mix all together.
  4. Heat a large pan until hot and add mixture in the bowl into the pan.
  5. Leave to cook for about 5-10 minutes, stirring often until the vegetables are soft and the chicken is cooked through.
  6. Follow the instructions on the tortillas wraps and heat them up.
  7. Serve with the tortillas, cheese, salsa, guacamole and sour cream.
