Moroccan Meatballs Recipe

MOROCCAN MEATBALLS: A great dish that is cheap, and you can impress your mates with your great cooking.

Serves around 5 portions so can freeze and eat at a later date.

Ingredients

  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 400g tinned chopped tomatoes
  • 2 tsp sugar
  • 30g fresh coriander
  • 30g fresh mint
  • 1 egg
  • 500g beef mince
  • 50g breadcrumbs, can use normal bread from a loaf and crush between your fingers.

Serve

  • Couscous
COOKING MEATBALLS: Easy dish to cook for yourself or friends and flat mates

Instructions

  1. Prepare all the ingredients.
  2. Heat a large saucepan with olive oil and add the onion, garlic, cumin seeds and coriander seeds. Cook until soft.
  3. Put half of this mixture into a large bowl to cool.
  4. In the large heated saucepan, add the tinned chopped tomatoes and sugar to the remaining onions, season with salt and pepper and leave to simmer on a low heat for 15 minutes, or until reduced.
  5. In the bowl, add the coriander, mint, egg, beef mince and breadcrumbs. Season with salt and pepper and mix with a spoon until everything has come together.
  6. Shape into walnut sized meat balls.
  7. In a separate pan, heat some olive oil and fry the meatballs until they are golden.
  8. Add the meatballs to the sauce and simmer for a few minutes until cooked through.
  9. Once they are cooked, follow the instructions on the packet of couscous to cook.
  10. Once the couscous is cooked, serve the meatballs with the couscous.
