
Serves around 5 portions so can freeze and eat at a later date.
Ingredients
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 400g tinned chopped tomatoes
- 2 tsp sugar
- 30g fresh coriander
- 30g fresh mint
- 1 egg
- 500g beef mince
- 50g breadcrumbs, can use normal bread from a loaf and crush between your fingers.

- Couscous

Instructions
- Prepare all the ingredients.
- Heat a large saucepan with olive oil and add the onion, garlic, cumin seeds and coriander seeds. Cook until soft.
- Put half of this mixture into a large bowl to cool.
- In the large heated saucepan, add the tinned chopped tomatoes and sugar to the remaining onions, season with salt and pepper and leave to simmer on a low heat for 15 minutes, or until reduced.
- In the bowl, add the coriander, mint, egg, beef mince and breadcrumbs. Season with salt and pepper and mix with a spoon until everything has come together.
- Shape into walnut sized meat balls.
- In a separate pan, heat some olive oil and fry the meatballs until they are golden.
- Add the meatballs to the sauce and simmer for a few minutes until cooked through.
- Once they are cooked, follow the instructions on the packet of couscous to cook.
- Once the couscous is cooked, serve the meatballs with the couscous.
