Cajun Chicken and Bean Salsa Recipe

CAJUN CHICKEN AND BEAN SALSA: Sorry about the blue plate, being a student is hard when you can’t afford nice plates

1 chicken breast = 1 portion. Salsa serves A LOT of people.

Ingredients

Chicken

  • Chicken breasts, get as many chicken breasts as there are people.
  • Cajun seasoning.

Salsa

  • 100g can pinto beans OR kidney beans if you can’t find pinto, rinsed and drained.
  • 1 red pepper, diced.
  • 1 avocado, peeled and diced.
  • 2 spring onions, sliced.
  • salt and pepper
  • Juice of 1 lemon
  • Handful of fresh coriander, chopped

Serve with rice

Instructions

  1. Preheat oven to gas mark 6/180 degrees fan oven.
  2. Make the salsa first by preparing all the ingredients listed under salsa.
  3. Put all the salsa ingredients in a bowl, season and dress with olive oil and lemon juice then set aside.
  4. Lay the chicken on a chopping board and bash a bit to flatten (can use a spoon, rolling pin, anything to get the chicken flat).
  5. Coat the chicken with little olive oil and cajun seasoning.
  6. Place the chicken breasts on a baking tray and put in the oven for 30 minutes or until the chicken is white all the way through.
  7. Serve the chicken either whole or cut into slices with salsa and rice.

  • Cajun = £0.90
  • Pinto beans = £0.55
  • Red pepper= £0.45 each
  • Avocado = £0.85
  • Spring onions = £0.60
  • Lemon = £0.30
  • Fresh coriander = £0.70

Total cost: £6.15
